This Small Shop's Lechon Baka Deserves to Be on Your Must-Try List

(SPOT.ph) Lechon baka (or litson baka) may be uber-trendy now in Manila, largely thanks to the famous version by Andok's that was introduced in late May. But the dish is nothing new; a number of shops and small businesses have been making their own versions of lechon baka (which can refer to Filipino-style roast beef or roast calf) for a long time. In Cebu, one online seller known for their take on the meat dish is Steve's Lechon Baka, based in Mandaue City.

Steve's Lechon Baka has been around since February of 2020, established as a small part-time business as owner Steven Cedric Co recently graduated with an Accountancy degree and while studying for their board exams. "I started making [or] roasting lechon baka only since the business began, but it has been my longstanding favorite when it comes to roasted [food]... since [I have] childhood memories of eating lechon baka every Friday at my father's restaurant," Co shares in an exchange with SPOT.ph.

"I got the recipe from my Uncle who also had a stint with the lechon baka business back in the day, and added my own version of flavors to the meat and sauce to better refine and improve its taste... based on what I loved eating as a kid," explains Co. "The roasting process is a very slow process compared to other kinds of meat. We basically make a marinade [from] herbs and spices not uncommon to [pair with] beef and inject it before roasting it."

Today, Steve's Lechon Baka has a short-but-sweet menu that focuses on what they do best: Lechon Baka, of course. You can go whole hog—er, cow leg—with a Whole Paa (P9,500), a.k.a. a bone-in whole leg of lechon baka good for 40. (Or, y'know, one very hungry carnivore.) But if you're not throwing a 40-plus person mañanita or solo mukbang anytime soon, you can also buy cooked slices of the roasted beef in half-kilo (P700) and one-kilo (P1,200) amounts—perfect for throwing into meals like fried rice or roast-beef sandwiches, or just munching on its own.

The Whole Paa is perfect for big celebrations.

For smaller parties or just everyday meals, you can also get cooked slices by the half- or whole-kilo.

Another way you can try their flavor-packed lechon baka is with the Lechon Baka Fried Rice (P120), which fuses the beef, rice, and their signature sauce for a great one-pot meal.

You can also go for the Lechon Baka Fried Rice, which is a whole meal in a bowl.
