Mango Shortcake by Sainte Anne Cakes Manila
Sainte Anne Cakes Manila proves you don’t need a lot when you’ve got good ingredients—in this case, a lush chantilly cream, sweet and juicy fresh mangoes, and a light-as-air chiffon cake join forces to make one of the dreamiest mango cakes in town. O.G. Tres Leches by Milkrun
When you can’t choose between creamy or cakey, you can always turn to good ol’ tres leches cake. Milkrun makes some of the best versions in Manila: always moist, milky, and not too sweet. They make the cakes in a couple of flavors, including Espresso and even Ube—but you can never go wrong with their basic (but by no means boring) O.G. Strawberry Shortcake by Baby Yulo
A long-time favorite among the well-heeled, Baby Yulo’s Strawberry Shortcake (starts at P1,600/small) takes the classic strawberry-shortcake combo of berries, cake, and cream to the next level. Best served semi-frozen, it’s got a generous amount of berry-tinged cream that’s as rich as it is tangy (and almost like ice cream when frozen!) and a soft, pillowy cake base that perfectly balances out the cream’s velvety character. When you think caramel cake, what comes to mind might be a tooth-achingly saccharine and heavy dessert—but this famous version by Pasteleria Costa Brava is a happy antithesis to that. It’s light and not too sweet, with a soft and jiggly cake base and smooth caramel frosting that glides on the tongue like silk. Tiramisu means “pick me up” in Italian, and Little Butter’s version (P1,300/small, P2,200/large) lives up to that translation with its rich combination of thick mascarpone cream, coffee-soaked savoiardi (lady fingers) that deliver robust coffee flavor, and dusting of cocoa powder for a mild but present bittersweet touch. Our number one sans rival in Manila (P1,500) switches up the more common cashews for earthy pistachios, which adorn the exterior of the cake and give it a naturally green hue. Its meringue is rightfully airy and crunchy, and is the perfect foil to the smooth and creamy butter frosting you’ll find around the torte and in between the layers.
