This Local, Handmade Chocolate Brand Started From a Kitchen Mistake

(SPOT.ph) There's always something celebratory about getting a box of chocolates—whether they're given as a gift or you get them for yourself. They're a great way to play with different flavors in a neat little package, and it's always a plus when they're as much of a treat for the eyes as they are for the taste buds. We recently spotted an online seller that makes one-of-a-kind bonbons you can have all year round—with an interesting origin story, too: meet Robin's Chocolates, a purveyor of handmade chocolate confections and cookies.

The venture gets its name from that of owner Rachel Rosario's son. "He is the one [who] gets me going every day. He is the reason I work hard, to provide for him," she shares in an interview with SPOT.ph. One Christmas, Rosario had the idea to create chocolate truffles as gifts for her officemates, but accidentally added too much cream for them to hold their shape. To remedy the situation, she got a silicone mold and used it to salvage the mixture, not realizing she "kind of" accidentally made bonbons in the process (despite not knowing what bonbons were at the time!). Rosario only officially discovered bonbons when she stumbled upon the Instagram page of New York-based Stick With Me Sweets, and soon enrolled in a chocolate crash course at the Academy of Pastry and Culinary Arts before eventually establishing Robin's Chocolates.

"Since I was still working in an office and being a single mom to Robin, I didn’t do Robin’s Chocolates full time, even after my course at [the Academy of Pastry and Culinary Arts] (APCA)," says Rosario. "It was only always for Christmas orders or a friend’s or relative’s orders that I did the bonbons. It was only when the pandemic started that I needed to quit my day job to help Robin with his online class. I’d do the online class with Robin in the morning, and do bonbons in the afternoon to generate income."

Robin's Chocolates creates their bonbons (P150/box of four, P275/box of nine, 350/box of 12) using Belgian couverture chocolates. They do deliveries within Metro Manila from Mondays to Thursdays; just be sure to send in your order by 4 p.m. the day before.
