People Are Turning Corn Into "Ribs" on TikTok and and It's Not as Bizarre as You'd Imagine

(SPOT.ph) TikTok has brought us a lot of things—dancing videos, lip-syncing videos, and even tutorials on how to steal condiments from restaurants (side note: don’t). But perhaps most importantly, the app has also brought us plenty of viral recipes, from dalgona coffee to pancake cereal to the more recent baked feta pasta—and the latest trend has gotten people chopping up corn and turning on their air fryers. Dubbed corn ribs, it involves corn on the cob cut in such a way so as to resemble, well, ribs (if you squint hard enough, we guess)—which makes it all the more fun to eat!

To make them, you basically cut corn cobs into “rib”-like planks by slicing into it vertically. Be careful with this step, notes food blog TheKitchn, as you can injure your fingers in the process! You then brush the pieces with a spiced olive-oil mixture (this recipe by @Spicednice on TikTok uses olive oil, lemon pepper, garlic powder, chili powder, paprika, salt, and pepper) then proceed to pan-fry, deep-fry, air-fry, or bake them. Once done, you are to drizzle on chipotle mayo (here’s an EZ-peazy recipe), crumbled cotija cheese (feta is a good substitute), and fresh cilantro.

If the combination of flavors reminds you of elote, that’s because it's essentially that—but with more char involved from the increased surface area given how the corn is cut. It's also presented in a form that you can pick up and eat with your fingers. As @Spicednice notes, “it’s way more satisfying to eat corn this way.” Spotters, you be the judge.
