General’s Lechon

General’s Lechon makes our favorite Lechon (starts at P8,200/eight to nine kilos) in Manila—it’s the kind that’s good from the outside-in, what with its crunchy, golden-brown skin, just-right layer of fat, and succulent meat. Elar’s Lechon is known for its succulent, melt-in-your-mouth meat that’s great by itself. You can get a Whole Lechon (starts at P8,000/15 kilos) or Chopped Lechon (starts at P275/quarter kilo) by giving them a phone or Viber call, or messaging them on social media.

Sarsa

You can count on Sarsa to deliver on leveled-up Filipino food, and they’ve got a line of pancit in bilao given the distinctive Sarsa twist. Their Pancit Regular (P650/good for three to five, P820/good for six to 10) is anything but your usual, coming topped with garlic-annatto shrimp, lemongrass squid confit, and tinapa chicharon. A more out-there option is the Inasal Sisig Pancit Canton (P750/good for three to five, P990/good for six to 10) which comes topped with crispy-as-can-be chicken skin. Toyo Eatery makes a fine Three-Cut BBQ made with three cuts of pork for a complex layering of flavors and textures.
