There's a New Pho Spot in Town and They Make a Version With Soft Shell Crab

(SPOT.ph) We all love our rice and noodles, and we can't get enough of punchy flavors—but there are also differences that make other Southeast-Asian cuisines truly special in their own right. In particular, the Vietnamese noodle soup dish known as pho is one that Filipinos have come to embrace, thanks in no small part to its flavorful yet soothing nature and the variety of toppings that they come with. Most versions of the dish around Manila would have beef or chicken as their meat, but one new pho spot is going the under-the-ocean route and topping theirs with naturally umami soft-shell crab and other kinds of seafood. Say hello (or better yet, xin chào) to new Southeast-Asian resto HuChi, which is opening today, October 1, at 4 p.m.!

This new Southeast-Asian restaurant in Rockwell has us drooling with their pho and other savory eats:

Hu Chi's Pho Hai (P545) is basically a seafood shindig in a bowl, with poached shrimp, crispy soft-shell crab, mud crab, noodles, cabbage, basil, and leeks coming together in a warm and hearty broth spiked with cilantro-chili lime oil for zestiness and a touch of heat! HuChi also cooks up other versions of the noodle dish, like the Chicken Pho (P370) with a ginger-lemongrass oil, the Beef Pho (P390) with beef chuck, tendon, and meatballs plus a burnt-onion oil for depth, and the dine-in only Pho Prime (P595) with slow-braised beef ribs and tendon nuggets plus their own chili-garlic oil. HuChi also makes their marinades, meatballs, and sausages in-house and uses fresh and local ingredients while they're at it, too.

There's more to HuChi than just pho, though; don't miss their other noodle-based numbers like the Spicy Pad Thai with Shrimp and Crispy Egg Omelette (P325) with its namesake proteins plus crispy tofu; and fried-rice dishes like the Viet-Style Fried Rice (P200) loaded with beef, chicken, and assorted veggies. And if it's a handheld bite you seek, go for their take on the classic Vietnamese sandwich—the Huchi's Banh Mi (P355).
