(SPOT.ph) The cooler weather has us hankering for all sorts of warm soups, and it doesn’t get any more comforting than laksa. Its origins are complex (and have even been the subject of controversy), but today, it’s popular across Malaysia, Singapore, Thailand, and Indonesia, with each country and their regions having their own distinctive style of the dish.
In general, you can expect a noodle soup (noodle options include rice vermicelli and thicker “laksa noodles”) with a soup base that’s as rich as it is packed with an aromatic punch—some versions have coconut milk, some versions use a base of seafood and/or chicken broth—plus different toppings (i.e. shrimp, fish balls, chicken, egg, and/or bean curd puffs) and some condiment (sambal belacan, otak udang, and the like). If you’re looking to get your laksa fix in Manila, you’re in for a treat as we’ve rounded up restaurants and online sellers that make great versions of different styles. The Grid’s resident Southeast-Asian stall Babu makes a mean Classic Laksa (P395) with prawns, squid, fishcakes, tofu, and a boiled egg in a bold coconut-curry soup base. Bugis Singapore Street Food
Bugis brings Singaporean favorites to our shores, and among the dishes they’re best known for is their Singapore Laksa (P250). Here, rice noodles, eight assorted balls, beansprouts, and a hard-boiled egg in a heady coconut-based soup make for hearty sips. You can send them a message on social media for orders.

When at Shangri-La at the Fort, a meal at High Street Cafe is a must. They’re known for serving up eats from different cuisines, but in particular, they’re hailed for their Laksarap, which you can order as a DIY kit (P450). It's got everything you need to make a killer bowl of laksa: their signature broth—which has a great balance of a lush mouthfeel and a punchy, spiced flavor; pre-cooked noodles; and an assortment of toppings (bean sprouts, bok choy, prawns, squid rings, and fish balls). Sambar
Chef Nicco Santos and Quenee Vilar’s Southeast-Asian online food shop Sambar celebrated their first anniversary in late May by introducing a most luxurious take on laksa: the Lobster Laksa Lemak (P995), a collaboration with lobster-roll shop Bun Appetit with succulent steamed Maine lobster claws atop a savory soup that packs in tons of umami from fresh shrimp heads, coconut milk, and their own home-style “curry” paste. Completing the bowl are fresh QQ wheat noodles, fried tofu, bean sprouts, and sliced Japanese cucumbers. Yup, they went there. Alternatively, they also make a mean Shrimp Laksa Lemak (P575). Nanyang
It’s all about Singaporean classics at Nanyang, and you don’t want to miss their Laksa (P268), which draws you in with the aroma of shrimp and curry and has you stay for its array of toppings—including hard-boiled egg, fish cakes, tofu skin, thick white vermicelli noodles, and your choice of fish balls or prawn (we’re huge fans of the latter!). Hailing from Malaysia is Limapulo (a.k.a. Lima Pulo: Baba Can Cook), whose laksa has been awarded the Best Curry Laksa in the Klang Valley in Malaysian publication The Star People’s Food Awards. The good news is that they opened their own Philippine outpost in 2020, so you can try the Nyonya Laksa (P199) for yourself! It's the kind that's fragrant and potent with flavor, with a thick broth cradling bihon and noodles, shredded chicken, fried bean curd, julienned cucumbers, a boiled egg, bean sprouts, fish balls, calamansi, and sambal paste.
