(SPOT.ph) There are numerous styles of pizza all around the world, but any good version combines a couple of elements: A good crust (depending on the style) and a balanced combination of toppings—whether you’re going as simple as tomatoes plus basil plus mozzarella, or as elaborate as a ham-salami-sausage-onion-bell pepper-three kinds of cheese affair. There’s no shortage of pizza spots in Manila, but we recently tried one standout pizzeria that deserve their share of the spotlight. Check out Scorched Pizzas, a ParaƱaque-based shop that makes great pizzas that also happen to be vegan.
Scorched Pizzas makes the pies Neapolitan style, so you get slightly charred, puffy edges with a chewy interior, and a thin crust toward the center. We could pretty much eat it on its own, but it's also the perfect foil to their vegan toppings—dairy-free cheese, naturally vegan ingredients like mushrooms and spinach, and faux meat alternatives. While you can tell the difference (at least as far as the cheese and faux meat is concerned), the resulting pizzas truly shine in their own right, delivering an experience that's every bit as hearty and flavorful as your usual slices.
They’ve got the basics like the Margherita (P450), as well as the cheesy Spinach Artichoke (P485). Meanwhile, the Garlic and Mushroom is simple but stellar, with earthy mushrooms and sweet roasted garlic coming together for a whole greater than its parts.
For those craving a meat-like bite, a standout on the list is the Vegan Sisig Crunch (P470)—no that’s not an oxymoron—as it delivers the piquant, spicy flavor of sisig and comes topped with raw onions for extra crunch. They’ve also got the Vegan Shawarma (P495) that’ll satisfy your hankerings for the typically meat-filled Middle Eastern dish, as well as the smoky Bacon and Eggplant (P475).
Owner Emman Galvez has long loved the craft of pizza-making, and began Scorched Pizzas “as a pivot” in the midst of the pandemic in 2020. Although his initial lineup consisted of non-vegan pizzas, Galvez went vegan as he turned 51 this year—partly because he didn't want to have to take maintenance medicines at his age, but also as he realized that "our sustenanace as humans should not depend on cruelty." With that, his pizzas followed suit.
“The challenge to creating an all-vegan line up is for people not to miss what's common, [like] meat, sauce, [and] cheese,” he explains in an interview with SPOT.ph. “The [objective] really is for people not to [avoid missing] what they're used to, but rather present them an option they can appreciate that can be beneficial for them health-wise.”
