(SPOT.ph) Some people like to get their ice cream fix as scoops in cones; others prefer eating right out of the pint with a spoon. But there’s a special place in our stomachs for ice-cream bars, which are convenient to eat at home or on the go thanks to their easy-to-grip popsicle sticks. If you can’t have dairy or just want to try something new, we’ve got just the thing: Bubu Bars, a brand of handcrafted, ice-cream like frozen dessert bars that are vegan, dairy-free, and decadent as can be!
Co-owner Ria Soriano started making ice cream at home as a hobby in 2017, initially just as an exercise of creativity in the kitchen and way to “play with ingredients” easily found at home. This took a backseat as she got busy with her day job—that is, until 2020, as the pandemic hit. “Things were abruptly put on hold,” says Ria. “[So] my husband Jake [Soriano] encouraged me to leave my day job and pursue this passion project instead.” While doing research, the couple discovered that they were both lactose intolerant—which was a “big, big problem for us dairy lovers,” she shares.
Although they tried other non-dairy frozen desserts, Ria shares that they didn’t quite satisfy their cravings. “We were always big on mix-ins, rich texture and fun, playful flavors,” she shares. With that, they continued experimenting with recipes until—five months later—they finally settled on their own formula. “It was kind of a Eureka moment when we tried it for the first time,” says Ria. “Like we literally felt like [we were] kids again finally being able to enjoy something that tasted like the ‘real thing’.” The couple began selling their products in November of 2020.

Bubu Bars’ frozen dessert bars each have their own “nICE cream” base (made with different nuts and nut milks in place of dairy) that’s truly smooth, rich, and creamy without being too sweet. They're then covered with a thick layer of Auro single-origin dark chocolate in different percentages. Ria and Jake take inspiration from their “happy memories,” especially from their childhood, in coming up with their flavors. “We aim to create flavors that are always indulgent, and when we say indulgent, we really mean it. Vegan, dairy-free, yes—but no compromises in the satisfaction department!”
Their current lineup includes three flavors. The Fancy Pants (P220) gives you the no-fail combo of strawberries and chocolate, as it’s got their nICE cream blended with roasted strawberries, then covered in bittersweet 77% dark chocolate and topped with freeze-dried strawberries. Love caramel? Go for the Nuts For You (P220), featuring their nICE cream flavored with bourbon vanilla and caramel, plus a coating of 55% dark chocolate and topping of salted almond praline bits. And if you go bananas for, well, bananas, don’t miss the You Little Monkey (P220)—it’s got their nICE cream spiked with caramelized roasted bananas, then giving a thick coat of 55% dark chocolate and a Biscoff crumble.
“The inspiration behind the name Bubu comes from [Jake]’s childhood,” says Ria. “His parents would call him ‘Bum Bum’ playfully, and we thought “Bubu” was a fun twist to that term of endearment.” They aim to share that sentiment through their bars—“that fun, giddy feeling you had as a kid every time you get a treat, or when you are called pet names by your loved ones,” says Ria. “It’s just an overall happy feeling that is also unique and special to you.”
