But if you're looking for a less-common, more contemporary and one-of-a-kind way to experience cheese, it's about time you tried it with sake! You might not think it, but the traditional Japanese alcoholic beverage made with fermented rice makes for a great pair with cheese, thanks to how both contain lactic acid. Lactic acid contributes to the aromas and flavors in cheese and the distinct creamy feel and yogurt-y fragrance in sake—so they're a natural pair! If you're curious, we've got great news: Sofitel Philippine Plaza Manila's resident buffet Spiral is holding a Sake and Cheese Masterclass that'll open your eyes to the wonders of the sake-cheese tandem.
The Sake and Cheese Masterclass highlights the smooth and crisp flavors of sake, paired with Japanese and other international cheeses, as curated by Japanese Master Chef Masahiro Mizumoto. Chef Mizumoto has more than 35 years of culinary experience under his belt working at Japanese fine-dining restaurants in his hometown of Fukuoka, and heads Spiral's Japanese atelier today. The masterclass will be held at Spiral's Hidden Room on March 13, and slots go for P2,000 per person.
If it's more classic Japanese flavors you prefer, you'll want to check out Spiral's upcoming Sake Dinner (P3,500/person) on March 11, which features a six-course Japanese menu paired with premium sake, prepared by Chef Mizumoto. Just some of the courses you can expect are the Grilled Marinated Salmon with Kinzanji Miso and Torched Japanese Scallops with Miso Vinegar Sauce paired with Hakkaisan Tokubetsu Junmai, and the Trilogy of Miyagi Oysters paired with Tatenokawa Seiryu 50 Junmai Daiginjo.
Dabbling in cooking lately? You can try your hand at their Japanese Cooking Class (P2,500/person) on March 27, also with Chef Mizumoto at the helm, and prepare Japanese favorites that include Salmon Salad Roll, California Temaki, Mixed Okonomiyaki, Kani Salad, and more.

Spiral is the Sofitel Philippine Plaza Manila's all-you-can-eat buffet famous for its vast selection of food, spread throughout 21 different ateliers (a.k.a. stations)—including their winning cheese room. The buffet underwent a major renovation and reopened in 2012, following the damage caused by typhoon Pedring in September 2011. The buffet restaurant temporarily closed in March of 2020 in light of the coronavirus, but reopened in October that same year.
