(SPOT.ph) Ah, pancakes. There's arguably no better way to start your day, in part because they're the best excuse to eat cake for breakfast. They also take well to different toppings, be it sweet or savory. We recently spotted a gorgeous version that got our mouths watering: say hello to the Mixed Berry Stuffed Triple-Stack Buttermilk Pancakes by Cebu-based café and restaurant, Birdseed Breakfast Club + Café!
The Mixed Berry Stuffed Triple-Stack Buttermilk Pancakes is a berry shortcake-esque creation with buttermilk pancakes made from scratch, chantilly cream, fresh strawberries, macerated berries, and maple syrup. You'll love how the fluffy pancakes meld with the tart and fruity berries and rich cream! A plate goes for P340.
Birdseed Breakfast Club + Café specializes in all-day breakfast dishes as well as specialty coffee. Chef and Managing Partner Alyssa Lao shares, "Birdseed is a passion project of mine that stemmed from my love of breakfast food at any time of the day—bacon and eggs for dinner? I have never said no to that!" Lao comes from a family of home cooks and grew up in her mom's restaurants, and took her passion for food and cooking to the next level as she took a Bachelor’s degree in Hotel and Restaurant Management from the University of San Carlos, pursued further studies in Culinary, Baking, and Pastry Arts from the Global Academy in Manila, and soon joined the team at The Goose Station in Bonifacio Global City.
"While living in Manila, the culinary scene then was bursting with new concepts left and right, and so I loved to explore different types of cuisines not yet common in Cebu at the time," says Lao. "I then happened to discover specialty coffee through a friend, and quickly fell in love with the intricacies of it. And then I thought, why not combine my love of good breakfast food at any time of the day, my new-found appreciation of specialty coffee, and combine these two with the new flavor combinations and gastronomic methods I have learned along the way?"
While Lao started conceptualizing Birdseed Breakfast Club + Café in late 2014, they officially opened their doors at N. Escario street, Cebu, in January 2016. As "gourmet" breakfasts was not yet popular and specialty coffee was almost unheard of in Cebu when they first opened, they started out with a limited menu that revolved around comfort food. This was no ordinary comfort food, mind you—Birdseed went by the philosophy of using fresh and quality ingredients, and wherever possible, they made components (such as their corned beef, smoked honey bacon, and more) from scratch, in-house. They've since expanded their menu, still following the said philosophy, but with more variety that there's something for everyone, any time of day.
Aside from pancakes, you can feast on omelettes, waffles, toasts, and big breakfast plates while in their chill and cozy space. The French Toast with Berries (P260) is another great sweet option, while the Chicken and Waffles (P300/half, P400/full) is a savory-sweet alternative to those who must have their meat. Both options are great with any of their specialty brews, like the Cappuccino (P120).
Meanwhile, their house-cured salmon shines in the Eggs Atlantic (P320), as does their homemade U.S. corned beef in the Corned Beef & Hash (P360). And for those looking for an option closer to Filipino hearts, there's the Mom's beef Tapa Silog (P390) with their own top-secret tapa recipe.
Beyond breakfast eats, you'll find everything from light-but-tasty appetizers, flatbread, sandwiches, pasta, and what they call "Night Owl Eats". You can start any meal with the Eggs & Chorizo Fundido (P320) or Vegetariana Flat Bread (P285), then follow it up with the Anchovie al Ajilo (P340) pasta. They've got stellar desserts, too, like the tart Lemon & Vanilla Cake (P165).
Breakfast food is best paired with good coffee, and here in Manila, some great bottled versions you can get are those by Yardstick and Man on the Moon.
