Ping Pong Diplomacy's Dan Dan Rice Is Back With a Feisty, Flavorful Vengeance

(SPOT.ph) Though traditional Chinese eats are always a good idea, it's also worth exploring how it can be remixed and played around with! That's exactly what local establishment Ping Pong Diplomacy did as they opened their doors at Bonifacio Global City in 2017, serving up modern Chinese eats that were as eye-opening in taste as they were vibrant in presentation. They closed their doors in 2018, but if you've been missing their signature dishes, we've got good news: Ping Pong Diplomacy has reopened as a cloud kitchen over at The Grid!

Ping Pong Diplomacy is back; check out some of the drool-worthy eats you can order:

Ping Pong Diplomacy's bringing back a number of their signature dishes—and though the current lineup is on the short side, there's definitely no shortage of flavor to be had here! The Crunchy Eggplant (P295/good for two to three) is a great place to start: This crispy starter upgrades the usual eggplant-tempura affair with the addition of a house fragrant sauce and shower of leeks, red chili, sesame seeds, fried shallots, and cilantro for an aromatic bite with a touch of heat!

Meanwhile, the Simple Fried Egg (P290/good for two to three) is anything but, well, simple: It's got eggs deep-fried until crisp and lacey, then taken out to flavor town with toppings of pork floss, hoisin sauce, crispy chicken skin, fried shallots, chili, and spring onions.

If it's meat you crave, go for the Ping Pong Wings (P815/one dozen). These fried chicken wings are tossed in their own special spice combo plus pork floss for added umami, then served with pickled sweet cucumbers, fried leeks, red chili, and sesame seeds. The intriguing Not Mapo Tofu (P475/good for two to three) turns classic mapo tofu on its head, giving it a chawanmushi-esque twist that involves a steamed soy custard topped with a house mapo-tofu sauce, fried leeks, ground pork, fried leeks, sesame seeds, and red Szechuan peppercorns for a fruity kick.

Of course, almost no Asian meal is complete without rice, and the Dan Dan Rice (P515/good for two to three) is definitely worth checking out. Here, Ping Pong Diplomacy stir-fries Japanese rice with their own dan dan paste, and makes it a party with squash, green peas, shiitake mushrooms, and ground pork. Topped with fried eggs, crispy chicken skin, and crushed peanuts, you get a dynamic mix of savory, spicy, meaty profiles that'll have you back for more spoonfuls. An order is good for two to three—but don't be surprised if you find yourself polishing off a whole tray.
