(SPOT.ph) You don’t usually find the words “burnt” and “swoon-worthy” in the same sentence. That is, of course, unless the topic revolves around Basque burnt cheesecake! Thought to possibly originate from a restaurant called La Viña in San Sebastián some three decades ago, it rose to fame in 2020. And while we love a good New York-style cheesecake any day, we were among those who became instant converts.

This style of the dessert pretty much breaks the rules, going deliberately for a “burnt” exterior. But it makes way to a creamy cheesecake interior that’s often more on the rare or even molten side of the cheesecake-doneness spectrum; and while it lacks a crust, the contrast between the caramelized edges and slightly tangy insides is just a dream to behold. Workshop was one of the first to bring Basque burnt cheesecakes to our shores, and their version (P1,500) remains one of the very best. Smooth and creamy on the inside with a properly burnt top, it wows in its simplicity—and it sure doesn’t hurt that it’s not too sweet. Owned by Gallery by Chele’s Chef Chele Gonzalez and his wife Teri Gonzalez, Chef Chele’s Kitchen’s Basque Burnt Cheesecake (P950/six and a half inches, P1,550/eight and a half inches) is the creamiest we’ve had in Manila. It’s got a molten, lava-like center when served at room temperature the day you receive it (which is what they recommend), but you can also serve it cold for a firmer but still smooth and lush texture that’s the stuff of dreams! Bonus: You can also get a swoon-worthy bibingka Basque burnt cheesecake from Chef Chele's other brand Deli by Chele; this is a special dessert by their Co-Executive Chef Carlos Villaflor.

This Pasig-based purveyor whips up all sorts of baked goods, from dreamy pies to a stellar Chocolate Mascarpone Cloud Cake—but you don’t want to miss their Basque Burnt Cheesecake (P1,250/eight inches, P1,800/10 inches), which has a light-meets-rich consistency that just about melts in the mouth.
