(SPOT.ph) When you think of Thai food, the classic soup known as tom yum undoubtedly comes to mind. It appeals with its sour-spicy profile, medley of mix-ins (common additions include seafood like shrimp, and vegetables), and complex aromatics (lemongrass, kaffir lime, and the like)—all of which make it an excellent dish to cozy up to after a long day (especially when it's cold out!). In its original state it's got a soul-soothing character, but imagine the soup taken out for a modern spin, with the flavors turned up and extra textural contrast to boot. That's exactly what you get with this cool dish by Made in Bangkok, a cool new Thai venture by the Raspberry Kitchen Group (also behind Ginza Gyu and Mama Cha) and Chef Francis Lim (of Nav Modern Thai fame)!

Made in Bangkok's Ingenious Crispy Take on Tom Yum
Dubbed the Tom Yum Puff-Noods (P850), this interactive dish has two parts. You get a box of crispy puffed noodles, and a container of tom yum sauce—essentially a creamy and concentrated sauce with the herby, zesty flavors of tom yum soup, as well as whole jumbo prawns, fish cakes, cherry tomatoes, and veggies. Give the sauce a quick reheat in the microwave, then pour it over the noodles—pro tip: get your phone cameras ready, as this part is Instagrammable as heck.
As the sauce hits the noodles, the latter makes a crackling sound and deflates, softening ever so slightly but retaining a hint of its crunch. The noodles absorb the punchy flavors of the sauce beautifully, and the combo of the former's crispiness and the latter's creaminess is truly a sensation to behold. And with juicy tomatoes, crisp-tender veggies, plump fish cakes, and perfectly-cooked prawns joining in the fun, it's a taste-and-texture party that'll have you hooked from the first to the last bite.
The Inspiration Behind Made in Bangkok + What Else to Try
Chef Francis Lim is no stranger to Thai cuisine, of course. Aside from Nav Modern Thai, he's worked the kitchens of Dusit Thani and People’s Palace—and he cites his love for Asian cuisine, "especially Thai food," as the driving force for his concepts.
For Made in Bangkok, he teamed up with the Raspberry Kitchen Group, founded by well-known F&B figures Rich Sanz and Maxine Marcelino (who then partnered up with Mikael Jiang and Queenzyleen Lee). And as far as their lineup goes, Chef Lim opted to give a "playful spin" on Thai food favorites. "A lot of the dishes [are the kind] most of us also can easily relate to, like fried chicken, steak, and crispy noodles," he shares in an exchange with SPOT.ph.
Made in BKK's menu is focused but is full of other gems you ought to try as well. The Thai Crispy Chicken Curry (P490/single serving, P1,100/tray) is another flavor-packed choice that gives classic Thai curry a crispy update. It's got boneless fried chicken over nutty coconut rice and a vibrant shimeji mushroom salad, served with an aromatic house-made curry sauce that you can pour over or spoon into in between bites of the rice and chicken.
For the beef-inclined, the Wagyu Thai Steak Box (P890) shouldn't be missed, as it highlights Australian Wagyu that's pan-seared for a browned exterior while retaining a tender and melt-in-your-mouth interior. Rounding out the dish are Thai steak rice for umami; an egg with a golden and runny yolk; and green curry salt and tamarind steak sauce to amplify the rest of the flavors.
Even the drinks at Made in Bangkok are well thought out. There's the creamy-meets-vibrant Tropical Thunder (P165), which combines fresh passionfruit and mangoes with coconut milk. But what we're totally obsessing over is the Sticky Mango Rice Drink—an ingenious beverage patterned after the classic Thai dessert, with fresh mangoes and a creamy layer of rice that makes for a chewy, nutty contrast.
