(SPOT.ph) If the West has their chicken soup as a classic soul-soothing dish you can always rely on, Vietnam has their pho—a.k.a. the traditional noodle soup you can also find on the streets. At its core, it consists of a light but hearty broth that’s made by simmering animal bones low and slow, topped with meat (more on that in a bit), fresh veggies like bean sprouts that add crispness, fresh herbs like mint or basil for zinginess, and neutral-tasting rice noodles that cushion the other flavors.
Pho is usually accompanied with beef (including lean cuts like flank or sirloin, fattier cuts like brisket, unctuous parts like the tendon, and so on), chicken, or seafood; heck, you can even find meatless versions around. Most versions are also served with optional seasonings and condiments like lime wedges, sweet-savory hoisin, or spicy sriracha—and though purists will argue that you should resist the urge to pour heaps onto your bowl (to let the broth shine!), they do allow you to customize the taste of the resulting slurps and chopstick-fuls just as you please. Bawai’s
Thank goodness Tagaytay cult-fave Bawai’s has branches in Manila, because that means you don’t have to travel far to get your fix of their winning Vietnamese fare—including their pho! We’re big fans of their bright-tasting yet hearty Pho Bo (P365) or beef pho, which made it on our 2016 Top 10 Pho in Manila list, but their Pho Ga (P355) or chicken pho is well worth a try as well. They use ingredients imported from Vietnam as much as possible, resulting in a real-deal, vibrant flavor that’ll transport you straight to the said country. Saigon Corner
This under-the-radar Vietnamese eatery in Quezon City deserves more love. They do a lot of Vietnamese eats well, but their pho lineup is a great place to start. There’s the Fresh Beef (P285) with succulent beef strips that melt in the mouth, the Beef Brisket (P285) with brisket and meatballs, and the Special Pho (P365) that combines the two. Try the more one-of-a-kind variations too—namely the Coconut Chicken Pho (P325) that combines chicken broth with young coconut juice and succulent coconut-meat noodles for slightly sweet meets savory sip; the Satay Pho (P300) with a deep beef broth given richness with peanuts and chili, plus meatballs and beef brisket; and the meatless Vegan Pho (P250). Phat Pho
An institution in Cebu that was brought to Metro Manila shores by the Moment Group, Phat Pho makes pho with true-blue Vietnamese flavor by taking no shortcuts and using locally sourced fresh ingredients where possible. Their Pho Bo (P260/small, P410/large) or beef pho uses U.S. Angus beef for a tender bite and rich beefy flavor (it finished fifth in our 2016 Top 10 Pho in Manila list), while the Pho Ga (P245/small, P380/large) has thin slices of chicken that go well with the mellow soup base and nutty bean sprouts. If you love having spice in your life, try the Seafood Pho (P490/large) which has a spicy seafood soup base plus fish cakes, squid, and poached shrimp. And for an all-out experience, don’t miss the Pho Special (P290/small, P435/large) with shaved U.S. Angus beef, braised beef, meatball, and tendon for a mix of meaty, tender, succulent, and gelatinous textures. Chi Em Gai
You can get fresh and flavorful Vietnamese dishes at Chi Em Gai, and that includes their soothing bowls of pho. The Pho Bo (P189/solo, P349/sharing) or beef noodle soup and Pho Ga (P169/solo, P319/sharing) deliver a good dose of the natural flavors of their respective meats, while the lighter but no less hearty Pho Hai San (P389/sharing) or seafood noodle soup is a great bowl to down on a hot day. This Vietnamese spot with branches in Mandaluyong, Marikina, and Antipolo captures the clean yet bright taste of the cuisine really well—and this applies to their pho, too. Their Vietnamese Beef Noodle Soup (starts at P190/regular) was a contender in our 2016 Top 10 Pho in Manila list, thanks to its full-on beef flavor accentuated with fresh herbs and firm noodles. You don’t want to miss the other pho variations they’ve got, though—which include the hearty Vietnamese Chicken Noodles Soup (starts at P170/regular) or chicken pho with cinnamon and star anise for an extra dose of warmth, and the Seafood Noodles Soup (P330) that’s got a zingy lemongrass-atsuete broth and toppings of crab sticks, shrimp, squid, and lobster balls. So Mot Vietnamese Cuisine
“So mot” means “number one” in Vietnamese—and we’ll let you be the judge on whether they live up to that name, but what we can tell you is that their pho is amazing stuff. It’s got a broth that’s light yet umami and subtly tinged with the aroma of herbs, rice noodles that retain a slight bite, and tender meat—whether you go for the beef-topped Pho Bo Tai (P228), chicken-topped Pho Ga (P228), or beef-ball topped Pho Bo Vien (P228). Tra Vinh Philippines
Tra Vinh is another one of our favorite pho places in Manila. They come from Australia and specialize in Southern Vietnamese eats, the said noodle soup included—and their pho selection has something for everyone. You can’t go wrong with the Raw Beef Noodle (P270/regular, P350/large) that flaunts medium-rare beef slices so tender they melt in the mouth. But for a different experience, you can also go for the Spicy Combination Noodle (P280/regular, P370/large) that brings on welcome heat; the umami-filled Crab & Seafood Noodle (P290/regular, P390/large); or even the spiced Curry Chicken Noodle (P280/regular). Pho Hoa is where you likely had your first taste of Vietnamese food locally—after all, the U.S.-originating franchise has been around for many years in the Philippines, with multiple branches in the Metro. Their pho remains a go-to for its straightforward flavorful makeup, and they’ve got quite the extensive selection, too—from 1 Pho Nam (starts at P354/small) with thin and meaty slices of beef flank; to the 50 Pho Chin, Nam, Gan, Bo Vien (starts at P352/small) loaded with brisket, flank, tendon, and meatballs; to the underrated but must-try 15 Pho Canh Chua Tom (starts at P432/small) with a tangy broth, meaty prawns, and slightly sweet pineapple.
