(SPOT.ph) With great-tasting eats that span different cuisines, Gourmet Gypsy Art Cafe is an institution in Quezon City. If you're craving their signature global flavors and are up for a drive out of town, you're in luck. GourmetGypsy's Chef Waya Araos-Wijangco recently opened Gypsy by Chef Waya in Baguio City!

Go out for a drive this weekend at this Gourmet Gypsy Art Cafe's new restaurant in Baguio:

In an interview with SPOT.ph, Gypsy by Chef Waya partner Jose Margo Flores shares that he met Araos-Wijangco via Frontline Feeders, a community-led initiative to provide meals to medical frontliners. Araos-Wijangco and her team prepared meals for frontliners and Flores was in charge of digital operations. They opened the Baguio restaurant in late May, not only as a sort of extension of Araos-Wijangco's well-loved Quezon City venture (which sadly closed one of its branches in 2020)—but also as a "homecoming" for Chef Waya, as she actually grew up in the City of Pines.

The establishment perfectly fits in Baguio's relaxed and nature-forward environment, featuring a bright space with a laid-back yet chic, bohemian-leaning vibe of mostly whites and browns. Breathing vibrancy into the space are also pops of color from details like teal plates and goblets on the tables, and indoor flowers and plants. You also get a view of the garden of Baguio's Mirador Jesuit Villa from the windows in the main dining hall.

As with their Quezon City outpost, you get to travel by taste here as their repertoire includes dishes from all around the world—similar to Gourmet Gypsy's, but incorporating Baguio produce and ingredients where possible. Start your meal on a light note with the Fruit and Nut Salad (P195), which highlights fresh seasonal Baguio fruits and cardamom-glazed nuts tied together with a strawberry vinaigrette; or go for one of their all-day breakfasts, like the Salmon Avocado Toast (P320) with salmon gravlax, avocado, and scrambled eggs on focaccia for a hearty mix of smoky and buttery.

A one-of-a-kind choice is the Spaghetti Al Nero (P320), which bridges together the sea and the earth with a squid-ink sauce, mango chunks, and an herby basil chiffonade. And for a heavier bite, go for the Indian Butter Chicken (P460) with chicken tikka and a yogurt tomato masala sauce; or the Burnt Miso Butter Salmon (P680) that gives salmon fillets an umami punch from miso.

We'll also let you in on a bit of a secret: Located within their premises is the semi-hidden Taguan Cafe, owned by Flores. "I want to created a safe space for people who want to drink coffee and have conversations," he explains. The idea was conceptualized "just this year" and he brought it up with Araos-Wijangco, and so the two decided to partner it up with the Chef's new restaurant. Here, they serve a variety of caffeinated drinks—including espresso-based sips made with their own Taguán blend of beans from Atok and Cavite—in a cozy space.
