Cafe Elim’s Mango Fresh Cream

Cafe Elim’s Mango Fresh Cream (P1,300/eight inches, P700/six inches, P130/slice) is made with three layers of soft vanilla sheet cake with an even distribution of light cream and fresh mangoes in between. The hand-piped cream on top gives the cake a very elegant feel, while the fresh mango pieces make it refreshing and light. Plus, it comes in a super cute pastel-colored box. Good news for lovers of Bantayan’s famous Brazo de Mercedes Classic Roll: Kermit’s Cafe has finally arrived at the shores of the mainland! The 21-year-old favorite is simply a classic. Rich, decadent custard hidden inside a fluffy meringue—this cloud-like roll is delicate, with just the right amount of sweetness. We also love it because it is huge and affordable! A full roll is 16-inches long and costs P400, but you can get half a roll for P240.

This cake has layers of light chiffon, yema filling, and buttercream topped with chopped candied pili nuts. Feeling adventurous? Try Chef Table’s seasonal Green Tea Mango Avocado Cake (P200/slice, P1,500/nine inches, P3,100/12 inches). This cake was originally conceived as Chef Raphael Wong’s entry for a school competition, and was later adapted to become part of his menu. It has a green tea-flavored chiffon base and cream that’s infused with fresh mango and avocado bits. It has the bitterness of green tea, the sweetness and sourness of mangoes, and the fresh taste of avocados. It perfectly balances all three flavors and tastes unlike anything we’ve had before.

With the goal of creating a cake that’s neither too sweet nor heavy, Trina Kokseng came up with what is now Treat Street Cafe’s Honey Toffee Crunch (P1,050/whole cake, P105/slice). This cake is made up of three elements—the buttery cake, the light cream, and—the star of the show, the honey toffee crunch. The bitterness of the toffee perfectly balances out the sweetness of the cream, and the crunch just makes it so fun to eat. Be warned, this cake is deceptive: You might think it’s heavy but it’s actually so light that it’s easy to lose track of how many slices you’ve had. Great for someone who doesn’t want to feel like they overindulged—the operative word being “feel.”

If you’re looking for a Korean fruit-cream cake, Merci’s Strawberry Shortcake (P1,500/whole, P200/slice) is it. Pastry Chef Minji went back to her Korean roots for this one and she doesn’t scrimp on the berries. There’s not a hint of any artificial flavor on this pretty cake—only the real thing here. Visually it looks like a cushy dome and when you cut into it, the layers of soft cream in between the super milky cake just draw you in even more. You’ll be torn between immediately taking a bite and preserving the moment for the ‘Gram.

Tamp Cafe’s Yema Cake (P900/whole cake, P105/slice) tastes familiar despite its uncommon composition. This cake has both vanilla and chocolate chiffon layers with sweet yema in between. It’s covered in light cream with lots of gorgeous yema swirls. The swirls look so good that you'll want to swipe one off and have a taste the moment you see it. Despite all that, it's surprisingly not overwhelmingly sweet. You’ll find yourself finishing every last bit of cake and yema on your plate!
