Duck & Buvette takes a page from the French art of a cheese course—a pre-dessert course that typically involves a few different kinds of cheese, possibly paired with crackers, fruit, and the like—in the Basque Blue (P870/five inches), or blue-cheese Basque-burnt cheesecake. It's almost more savory than it is sweet—perfect if your old man's not a fan of sugary treats—and highlights the pungent, umami flavor of blue cheese in the form of a burnt-on-top, molten-within dessert.
