(SPOT.ph) There's a number of different pancit dishes you can find around the Philippines—from umami-packed pancit canton to seafood-y pancit malabon to squid-ink infused pancit choca. But have you ever tried pancit puti? As the name implies, this refers to a white, stir-fried pancit dish often made with bihon noodles and different meats. Dubbing themselves the "Home of the Original Pancit Puti," LSS Fastfood has been around since the '80s—so they're probably doing something right! Their Pancit Puti (starts at P448/bilao good for eight) has chicken and pork, plus toppings of spring onions and fried garlic. Don't be fooled by its pale appearance—it packs a wonderful meaty, umami profile that's plenty flavorful on its own, but is brightened by a squeeze of the calamansi. There's a good ratio of meat to noodle, too, so you get a bit of both in every forkful. Pro tip: It's best paired with their Puto with Cheese (P135/15 pieces mini, P150/10 pieces regular), whose savory-sweet taste balances out the meatiness of the Pancit Puti wonderfully.
