This Dreamy Russian Honey Cake Is a Multi-Layered Stunner

(SPOT.ph) Germany has their black forest cake, Japan has their castella, and we in the Philippines have our ube cake—but in Russia, it's all about the medovik, a.k.a. Russian honey cake. This torte has a rich history that goes back to the 19th century, when a young confectioner baked a honey cake for the then-honey averse Empress Elizabeth—without telling her about the honey content. (She ended up loving it!).

Today, it often features multiple layers of thin biscuits or cake layers made with honey, plus a creamy filling, for a dessert that tastes as dreamy as it looks. Chef Jade Kitchen goes for a modern take on their Russian Honey Cake that still delivers the distinct, aromatic honey flavor of the original. They layer together medovik biscuits, honey cremeux, a light vanilla mousse, and an almond-honey croquant so you get different tastes and texture in each forkful! Plus, the color contrast between layers makes for a totally IG-worthy treat. A 13-inch cake goes for P1,750.

Chef Jade Kitchen is owned by Chef Jade Saducas, whose impressive resume includes working as the pastry chef and resort cake artist at Dubai's Madinat Jumeirah. She's also bagged multiple awards from acclaimed institutions, including the Cake Designers World Championship by the International Federation of Pastry Ice Cream Chocolate in Milan in 2017, the Pastry Chef of the Year at the Caterer Middle East Awards in 2018, and more.
