(SPOT.ph) Chef Sau del Rosario is known to advocate for Kapampangan food—and he reimagines the cuisine in a modern light at Pampanga's Café Fleur. The restaurant is a must-visit whenever you're in Angeles, but if you're itching to try their food and are stuck in Manila, you're in luck: Café Fleur is opening very soon in Poblacion, Makati!
Café Fleur will be opening two outlets in Poblacion: Le Petit Café Fleur, which will be offering panaderya and boulangerie-style food items, and Le Grande Café Fleur, which serves up what they call "avant-garde Capampangan cuisine." In an exchange with Café Fleur on Facebook, the former opens "this Christmas" while the latter opens on the first quarter of 2021.

While we haven't gotten word about the exact menu items yet, the Kapampangan café is known for a couple of dishes that hopefully make it to Manila as well. They make stellar baked goods, among which are the cheekily-named Vuco Fye and Egg Fye—yes, that's their buko pie and egg pie, respectively. As for savory dishes, some of Chef Sau's signatures are the Tamales that's served in a glass, Truffle Macadamia Kare-Kare, Sisig Paella, and Lamb Shank Caldereta.
