The Test Kitchen's New Dishes Are an Adventure for Your Palate

(SPOT.ph) Chef Josh Boutwood's The Test Kitchen isn't one to shy away from experimentation. We've long praised their playful but well-thought out dishes—and this time around, they're adding new dishes to their lineup, which take classic favorites and give them their own signature spin. For one, there's the Beef Tartare, which happens to offer as much of a feast for the eyes as it does to the appetite.

The Beef Tartare (P560) employs lightly aged beef seasoned with fresh horseradish root and mustard leaf gremolata for a punchiness that balances out the beef's richness. It's then served with an egg yolk gel and covered with a layer of bread for pops of creaminess and crunch amid the melt-in-your-mouth beef. Be sure to get a bit of all the components in every bite!

They've also got a deceptively simple Pork Cabbage Miso (P1,095)—essentially a pork chop dish, but by no means just any other pork chop dish. Here, the meat is glazed in a cola-miso sauce and grilled to a perfect tenderness over open charcoal, then served with braised red cabbage, pickled jicama, and carrots for a tart and earthy profile.

And if you're looking for a crisp and fresh counterpoint to the heavier meats, go for the Zucchini and Head Cheese (P390). Sweet, raw zucchini is dressed in lemon juice and olive oil and given a zingy profile from fresh mint and parsley, plus umami from parmigiano-reggiano. If you're looking to dine in private, you'd also be happy to know that The Test Kitchen has reopened their mezzanine area.

The Test Kitchen is a restaurant helmed by Chef Josh Boutwood. Though it began only offering tasting menus from its former Kamagong Street outpost, it relocated to Rockwell in 2019, offering a slew of ala carte offerings that showcase Boutwood's culinary creativity.

Nothing brings out the character of beef tartare like a good bottle of wine, and other great wine spots we love in Manila are Galileo Enoteca and Barcino.
